The Easiest Oatmeal Chocolate Chip Cookies
Cookies are among my kids’ favourite treats, and this recipe tops my daughter’s list. It is a slight variation of the one my mom used while I was growing up, with a 1/2 cup less flour — a change she made about five years ago. The result is a less dense, more chocolatey cookie.
Ingredients
- 1 cup margarine
- 1 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla (pure or extract)
- 1 cup all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 teaspoon cinnamon
- 1 1/4 cups rolled oats
- 2 cups semi-sweet chocolate chips
Method
1. Preheat oven to 350°F and line baking sheet with parchment paper.
2. In the bowl of an electric mixer fitted with a paddle attachment, cream the margarine and sugar until light and fluffy.
3. Beat in eggs and vanilla until combined.
4. In a separate bowl, mix together flour, baking powder, salt and cinnamon.
5. With the mixer on low speed, add dry ingredients to wet ingredients.
6. Stir in rolled oats followed by chocolate chips.
7. Using a generous tablespoon, drop the dough onto the prepared baking sheet, spacing each portion about two inches apart. Dough will be quite wet.
8. Bake for 10-11 minutes until edges are lightly golden for chewier cookies. Bake an additional 2-3 minutes for crispier cookies.
9. Let cool for 5 minutes before transferring to a baking rack. Yields about 3 dozen cookies, depending on size.
