Super Tasty Apple Cinnamon Overnight Oats

Tired of the same old morning meal routine?

Overnight oats are an easy and healthy make-ahead breakfast that will keep you full until lunch.

This simple apple cinnamon recipe takes just five minutes to prep. And if crunched for time in the a.m., you can add diced apples instead of sautéing.

Ingredients

  • 1/4 cup plain yogurt (coconut, if desired)
  • 1/2 cup milk (plant-based, if desired)
  • 1/4 cup unsweetened apple sauce
  • 2 tablespoons maple syrup
  • 1 teaspoon vanilla extract
  • 1/2 cup rolled oats (gluten-free, if desired)
  • 1.5 tablespoons chia seeds
  • 1 teaspoon cinnamon
  • 1 large apple
  • 1/8 cup walnuts, chopped

Method
1. In an airtight glass container, mix together the yogurt, milk, applesauce, maple syrup and vanilla.

2. Stir in oats, chia seeds and 1/2 teaspoon of cinnamon until well combined.

3. Store in fridge overnight.

4. In the morning, remove overnight oats from the fridge. If room temperature oats are preferred, let stand on counter for about 1 hour.

5. Cut apple into thin slices. Then, warm a skillet on medium heat. Add butter or coconut oil to coat the bottom of the pan.

6. Place the apple slices in the skillet along with 1/2 teaspoon of cinnamon. Stir apples until all are coated with the melted butter or oil and cinnamon.

7. Add 2 tablespoons of water to the skillet. Cover the pan and cook until apples become soft, adding more water as necessary so apples don’t stick to the bottom of the skillet.

8. Scoop overnight oats into a bowl. Top with sautéed apples and walnuts.
