5-Minute Pumpkin Pie Spice Overnight Oats
I have officially hopped on the overnight oats bandwagon. After first trying apple cinnamon, I’ve moved on to other flavour combinations like pumpkin pie spice. While it may be out of season, I can’t get enough of this cozy blend that is made with cinnamon, ginger, nutmeg, allspice and cloves. You can buy this five-spice combination or make your own (see below).
Ingredients
• 1/4 cup plain yogurt (coconut, if desired)
• 1/2 cup milk (plant-based, if desired)
• 1/4 cup pure pumpkin puree
• 2 tablespoons maple syrup
• 1 teaspoon vanilla extract
• 1/2 cup rolled oats (gluten-free, if desired)
• 2 tablespoons chia seeds
• *1/2 teaspoon pumpkin pie spice
• 1/8 cup pecans, chopped
• 3 tablespoons raisins
Method
1. In an airtight glass container like Ikea’s Korken, mix together the yogurt, milk, pumpkin puree, maple syrup and vanilla.
2. Stir in oats, chia seeds and pumpkin pie spice until well combined.
3. Store in fridge overnight.
4. In the morning, add chopped pecans and raisins.
Overnight oats can be eaten directly from the container or scooped into a bowl. If you prefer to eat at room temperature, pull from fridge 2 hours before consuming.
*To make your own pumpkin pie spice, mix together 1 1/2 tablespoons ground cinnamon, 1 teaspoon ground nutmeg, 1 teaspoon ground ginger, 3/4 teaspoon ground allspice and 3/4 teaspoon ground cloves.
